As the summer days fade away and the fall weather cools everything down, it’s the perfect time of year to get into the kitchen and start baking! The first thing that comes to mind when we think of fall flavors is pumpkins. So, here are two of my favorite pumpkin recipes.
The first is a classic: pumpkin bread! This recipe is inspired by @Macy.Blackwell on TikTok. For this recipe you will need: 1 ½ cups of sugar; 2 eggs; ½ cup of oil; 1 ¼ cups of flour; 1 teaspoon of pumpkin pie spice; 3/4 teaspoon of salt; 1 teaspoon of baking soda; ¼ teaspoon of baking powder; 1 cup of canned pumpkin; and ⅓ cup of water. To make the bread, first mix together the sugar, eggs, oil, and pumpkin in a large bowl. Then, in a separate bowl, sift together the flour, baking soda, baking powder, pumpkin pie spice, and salt. Next, alternate between the dry ingredients and water. After that, combine the mixture with the wet ingredients. Stir the ingredients until combined, grease the bread pan, and pour the mix in. Finally, bake at 350°F for 45-50 minutes or until done in the center.
My second recipe is pumpkin chocolate chip cookies. This recipe is inspired by @Mari.Lebaron on TikTok. This delicious treat requires ½ cup of butter; 1 ½ cups of sugar; 1 egg; 1 cup of pumpkin; 1 teaspoon of vanilla extract; 2 ½ cups of flour; 1 teaspoon of baking powder; 1 teaspoon of baking soda; 2 teaspoons of pumpkin pie spice; ½ teaspoon of salt; and 1 cup of chocolate chips. First, beat together butter and sugar. Then, add the egg, pumpkin, and vanilla. Next, incorporate all of the dry ingredients. Next, fold in chocolate chips. Finally, divide the dough into small balls and then evenly distribute them onto a greased cookie sheet. Bake at 350°F for 15 minutes and enjoy!
