Spring is coming, and strawberries are the ideal way to celebrate the advent of such a wonderful season! Here is a simple recipe that you can serve at any outing, picnic, or even a simple meal.
What you will need:
- 1 lb spinach (I pinch off the larger stems)
- 1 pint strawberry, sliced set a few aside (egg slicer works wonders)
- 1/2 cup pecans, toasted
Dressing
- 1/3 cup roland raspberry red wine vinegar
- 1/2 cup sugar or 1/2 cup sugar substitute
- 1 teaspoon dry mustard
- 3/4 cup vegetable oil
- 2 teaspoons poppy seeds
